Speedy Gonzales Tex-Mex Breakfast
When you’re in a hurry and want a tasty filling lasting energy breakfast that’s high in protein and slow release carbs, try this Tex-Mex Favourite with Pappy’s award winning spicy pinto beans.
Ingredients (serves 1):
115 g Pappy’s Tex-Mex Spicy Pinto Beans
2 Table spoons of home-made or store bought salsa.
1. Heat the pinto beans in a pan, stirring occasionally until they begin to simmer.
Add 1 Table spoon of water to have a thinner bean texture.
If you want to try to make re-fried beans, don’t add any water and mash while stirring.
2. Cook 2 eggs as desired (or depending on how much time you have!) and season well.
Serve on a plate with 2 Tables spoons or salsa and enjoy.
(Also yummy with a spoon of sour cream, diced red onion and fresh coriander garnish.)
