We are a family business, here in Cumbria, but with roots firmly deep in the heart of Texas! Let me explain…. I am Robin, 3rd generation BBQ Pit Master, and Rodeo Queen! born and raised in Taylor, Texas, the BBQ capital of the World. I’m married to Michael, Lancashire lad born and raised and we live in Windermere. Our business is all about quality – we believe in using the finest local and heritage meats. It’s then Pit Smoked to a secret family recipe, passed down from my dad ‘Pappy’ who had an award-winning BBQ business in Texas:
The Texan way is low and slow – pit smoked over oak, [not pellets like some folks do]. Our process of smokin’ takes time, dedication and ‘know how’. The process can’t be rushed. Large meats can even take up to 30 hours, until you get the gorgeous pink smoke ring and peppery outer ‘bark’. This low and slow process allows the marbling and smoked flavour to gently come through, relaxing the meat so it becomes the tenderest, juiciest meat imaginable.
We’re servin’ pulled pork, brisket and ‘hot gutz’ barbeque smoked sausage (I make these gourmet beef sausages myself – a Texas secret recipe), Cumberland sausage, baby back ribs, chicken and turkey and folk are lovin’ them. We’ve been down to London and all over the County at Shows, and Festivals and are about to start working with some big fancy hotels too who are lovin’ what we do!
